Polenta

3 lb potatoes boiled and mashed. cooked in 3 quarts water. reserve your water. 2 1/2 cups cornmeal, add slowly to water with mashed potatoes added, stir constantly over medium heat until polenta comes away from the sides of the pan. pour onto your chopping block shape it and serve. You may have to use more corn meal, use your judgement. I learned to cook by the eye, not by any certain amount of food.
